Abstract

Fucoxanthin-loaded oil-in-water emulsions (FLEs) were prepared using medium chain triglyceride as an oil phase and l-¥á-phosphatidylcholine as an emulsifier. The stability of FLEs stored under dark condition at 25 ¡ÆC was investigated for 15 days in terms of droplet size change and fucoxanthin deterioration. The size of oil droplets on optical microscopic photos was about 3 ¥ìm immediately after preparation. And it increased to about 16 ¥ìm 15 days after preparation. The fucoxanthin content in FLEs was almost 90 % of its initial content soon after preparation, and it decreased to 75 % 15 days after preparation. The in vivo anti-obesity efficacy of FLEs was investigated by applying the emulsion daily on the back of rat for 30 days and measuring the body weight, the liver weight and the leptin concentration in the blood of the rats. FLEs?treated rats showed lower body weight and liver weight 30 days after the application than FLEs?untreated rats did. And the leptin concentration in the blood markedly decreased upon the application of FLEs.
